Bananas in Pyjamas

Today was a day for spending the morning in my pyjamas.  I figured with so few weeks left to sleep in - I should make the most of it!  I asked myself what would I really like to eat for breakfast this morning and the answer was banana cake.

Ok, so I didn't have banana cake for breakfast, but it was ready for a lovely morning tea.  It is my honey's mum's recipe and was oh-so-good with some lemon icing.  So good in fact, I invited my neighbour over to join me.  She didn't seem to think it was odd that I was still in my pj's.  Gotta love her.

I don't think I have ever eaten a bad banana cake, but here is the recipe for this delicious one if you would like to try it.

125g butter
2 eggs
1 teasp bicarb soda
2 cups self raising flour
1/2 cup castor sugar
3 ripe bananas
1/3 cup milk

Cream butter until soft, add sugar and beat until light and creamy.  Beat in eggs one at a time.  Add mashed bananas and mix well.  Combine bicarb soda with milk and add to mixture alternately with dry ingredients. Pour into 20cm tin and bake about 40 mins at 180c.  Ice with lemon icing.

Enjoy.  Preferably in pj's for the full experience :)

    Banana cake with lemon icing is my absolute favourite. Yours looks scrumptious!
