Chewy Cranberry-Apricot Muesli Bars

There is something about knowing exactly what is in my food that makes me feel good.  
Today we decided to make our own muesli bars - discovering along the way they are incredibly easy to make.

Here is the basic recipe we used and below I've shared with you our adjusted version.  So easy.
Little people seem to think they are pretty good too!


Combine:
2 cups dried fruit and nuts (This time we used cranberries, raisins, currants, and apricots)
1 2/3 cup rolled oats
2 teaspoons cinnamon
1/2 teaspoon salt
1/3 cup spelt or wholemeal flour 

In a separate bowl whisk together:
3/4 cup honey
1 teaspoon vanilla extract
1/4 cup olive oil

Add the wet ingredients to the dry, mix, press into a dish and bake for 25 minutes or so at 350F.

  1. Yum! - looks good. My kids are not so keen on nuts - so I grind them up and add them to the mix (you probably could replace the 1/3 cup of flour from your recipe with nut 'flour'.
